Try Steve Wiley’s ‘Muffeletta Omelet’
I love weekends because they allow for easing into the day, starting with coffee. After the infusion is complete, it's time for breakfast. On a recent Saturday, I poked through the fridge, and found the ingredients for a "Muffeletta Omelette." I used three eggs & two additional whites, whipped 'em up w/ a little hot sauce & creole seasoning. I put it in a black skillet, added a couple slices of Genoa Salami, & ham, some olive relish, & shredded Swiss cheese. I served it up with two slices of whole wheat toast, and a screwdriver. I love Saturdays!
