We're getting some of the coldest weather of the new year this weekend, and that means one thing: time to make a gumbo!

I've had gumbo on my mind since I saw Rob Perillo's forecast for this weekend earlier this week. I came across this video of a young Justin Wilson making a chicken and andouille gumbo and my weekend plans were made. It was fun watching Justin Wilson again. He was Food Network before there was a Food Network! The only thing I disagree with him about is using olive oil to make a roux. I'd rather use butter or if I have some, bacon grease!
