This will be great to serve on Cinco de Mayo!

Mexican Chicken with Rice

Ingredients

1 pkg Mexican rice mix (I use Mahatma)
2 Tbsp butter
1 can Ro Tel tomatoes
2 cups cubed cooked chicken
1 jalapeno, seeded and chopped
Shredded cheese, your choice
Sliced avocado
Sour Cream
Lime

Directions


Cook rice as directed, adding butter and tomatoes.
When cooked, add chicken and jalapeno.Cover and cook for 8-10 minutes.
Sprinkle cheese on top and serve with a dollop of sour cream and slice of avocado. A squeeze of lime adds a little kick. ENJOY!
