Avocado Boats – Cookin’ With Marilyn
The avocado is one of those perfect summertime foods; it’s light, flavorful, and refreshing. These avocado boats add tons more flavor and make your avocados a meal!
2 large avocados
Fresh lemon juice
1 Roma tomato,seeded and cubed
1 cup cubed French bread
1\2 cup finely chopped spinach
1\4 cup cooked crumbled bacon
1 tbs mayonnaise
1 tsp olive oil
1\2 tsp salt
1\4 tsp black pepper
Preheat oven to 400 degrees
Cut avocados in half,remove pits,and carefully remove peeling.Rub outside of each with lemon juice.Set aside.
Add all remaining ingredients and stir to combine.
Stuff avocados with as much mixture as possible,allowing the filling to come up over the sides.
Place them on a non-stick cookie sheet and bake about 10-12 minutes,or until filling has turned a golden brown.
Serve immediately and ENJOY !!!!
