Marinated Shrimp – Cookin’ With Marilyn
Grab some frilly toothpicks and prep this for your next get-together!
1\4 cup canola oil
2 finely minced cloves of garlic
1 Tbsp mustard
1 Tbsp salt
1\2 cup lemon juice
1 Tbsp red wine vinegar
1 lemon,finely sliced and seeded
1 med red onion,thinly sliced
1 can large pitted ripe olives
1 small jar chopped pimento
1 Tbsp chopped parsley
2 lbs boiled peeled shrimp
Dash of red pepper
In a medium bowl, whisk together oil, mustard, salt, lemon juice, vinegar, and pepper.
Stir in lemon slices,olives, sliced onions, pimento, and parsley. Mix well.
Add shrimp to bowl and toss gently to coat shrimp. Cover bowl with plastic wrap and refrigerate for 1 hour, but no more than 4 hours, or flavors will overpower shrimp. Toss again before serving and transfer to a glass serving bowl.
Serve with frilly toothpicks. This is great for holiday parties. ENJOY!!!!
