Here’s a great Friday recipe from Marilyn. It’s fresh, easy and delicious.
Jumbo Shrimp with Mushrooms and Garlic
4 garlic cloves,thinly sliced
2 1\4 tbsp olive oil
1\2 lb Shitake mushrooms, stems discarded and caps thickly sliced
2 lbs jumbo shrimp, butterflied
1\4 cup water
1 cup coarsely chopped cilantro
2 tbsp unsalted butter
salt and freshly ground pepper
yellow rice and lime wedges, for serving
In a large skillet, cook garlic in olive oil over moderate heat until lightly browned and fragrant (about 1 minute.)
Using a slotted spoon,transfer garlic to a plate. Add mushrooms to skillet and cook over high heat, stirring often, until browned, about 7 minutes.
Season shrimp with salt and pepper and add them to skillet. Cook over high heat until nearly cooked, 7-8 minutes. Add water and cook till evaporated. Add cilantro and butter to skillet and stir to coat. Transfer all to a platter and garnish with garlic. Serve with yellow rice and lime wedges. Serves 4. Enjoy!!
