Bacon and Eggs Panini – Cookin’ With Marilyn
A quick and easy breakfast or lunch from Marilyn:
6 bacon strips cooked until crisp
1 tsp butter
4 beaten eggs
4 slices sourdough bread
1\8 tsp salt
1\8 tsp pepper
3 oz Brie cheese-thinly sliced
8 thin slices of apple
1\2 cup spinach
2 tbsp softened butter
Directions–Heat butter in a large skillet over med heat. Add eggs, stir and cook until firm and set.
Place eggs on 2 slices of bread, sprinkle with salt and pepper. Layer with cheese, apple, bacon, spinach and top with remaining bread. Butter outside of sandwiches. Cook on a panini press or in skillet or indoor grill for 3-4 minutes or until bread is crisp and cheese is melted.
