As busy parents, we're always looking for something that will please a crowd and also not take too long to prepare. The recent cold fronts have given us plenty of reason to have chicken and sausage gumbo, but we were looking for something new. This one is it!

Not only is it made of just three ingredients, but it is also ready from start to finish in 20 minutes. It's perfect for weeknight meals.

3 Ingredient Potato Soup

  • 1 bag of frozen southern-style hashbrowns (plain or O'Brien style)
  • 1 carton (32oz) of chicken broth
  • 1 pkg (2.5oz) of country gravy mix

Combine the three ingredients in a large boiler or stock pot. Bring to a boil. Reduce heat to low and let it simmer until thick. To make it thicker, remove a spoonful of potatoes and mash them. Add the mashed potatoes back to the pot.

Top with crumbled bacon, cheddar cheese, or chives. This is completely optional as the recipe as written packs a ton of flavor and I'm not quite sure how.

The Heartbreaking Origins of This Recipe

We first found this recipe from a woman who was battling cancer. When she felt the worst during chemotherapy treatments, this soup was one thing she could tolerate. It was during that time that she created a cooking channel on YouTube which has grown in popularity.

Make a Cajun Version

This recipe would be good with some extra local ingredients:

  • Mix in 1b of crawfish tails
  • Add Smoked Sausage
  • Top with Sauteed Shrimp
