T-Boy's Boudin & Cracklin in Mamou is known for their amazing boudin, but they may have come up with something for people who want to live a healthier lifestyle, but still enjoy delicious cajun cuisine.

Their "Ultra Low-Carb Boudin" is a special recipe that T-Boy himself has worked tirelessly on, and the final product has the internet buzzing.

So, how did he make his Award-Winning boudin healthier without altering the taste?

First of all, the recipe aimed to go high protein with only a few simple carbs, so they added more meat and took away all the rice.

Well, sort of.

What T-Boy did was substitute "cauli-rice" to give you those "good carbs" that come from cauliflower. This will be a hit with people who are trying to keep carbs low and those who are diabetic. Those who have tried it say they can't tell the difference between the new recipe and T-Boy's famous boudin.
