Ingredients

2 Tbsp olive oil
1 cup diced onion
3\4 tsp cumin(divided)
1 cup white rice(rinsed)
1 1\2 cups vegetable stock
1 1\2 tsp garlic salt(divided)
2 cans (15 oz) black beans (well drained)
2 tsp chopped cilantro
juice of 1 lime
2 avocados(diced)

Directions

Add oil to heated pan and sauté for 4 to 5 minutes until soft.Add 1\4 tsp of cumin and stir.Add rice,stock and salt.Bring to a boil,reduce heat,cover and cook for 20 mins or until rice is just cooked.Fluff rice and allow to cool.

In a large bowl.combine beans with remaining cumin. Add cooled rice,cilantro,lime juice and toss together.Taste and adjust seasoning if necessary.Top with avocado just before serving.Squeeze a little lime juice over avocado and toss gently. ENJOY!!!
