Had grits in New Orleans at a place called Dots this weekend.  After having to doctor them with salt, butter and black pepper, I realized how little I knew about grits.  What are grits?

Grits became the potatoes of the South.  From Texas to Florida, grits are a morning staple.  Some people eat 'um plain, others with butter and some people add cheese.  Truth is, most restaurants serve grits that are too bland.  Trying to salt grits to taste after the fact is like trying to make dried concrete absorb water.  Like rice, grits taste better when sufficiently salted while cooking.
