A Healthy Pasta Salad
I love to cook. If I say so myself, I'm not bad at it. I'm no Emeril, but I can hold my own. I like his improvisational style & I rarely use recipes. I'm on a mission to lose weight, so I don't add processed sugar to anything & rarely use salt. When I do, it's sea salt.
The only cooking oil in my pantry is olive oil. Last night's project, pasta salad. I used 1 12 oz. package of tri-color "veggie" rotini, 2 cans of white albacore tuna, and 2 boiled eggs, but only 1 yolk, Some diced onion & bell pepper. I added the onion & bell pepper to the pasta during the last 2 minutes of cooking. After everything cooled, I dumped in some fat free ranch & low-fat mayo. I didn't measure it. Then I seasoned it to taste with a little onion powder, garlic powder, Italian seasoning and salt free "Tony's
