There is a time-honored tradition that almost all of us follow in Louisiana. That tradition is this, at some time you're going to eat a doughnut that doesn't have a hole in the middle of it. And when that happens, it might be the most rewarding fried dough experience you've ever been treated to.

Yes, I am talking about beignets. We love our beignets here along the bayou. There is nothing like a hot cup of coffee, I will take the chicory in mine if we're going to do beignets, and a plate full of fried dough squares piled high with powdered sugar. It's a match made in heaven.

But, if there is a drawback to our Louisiana love affair with beignets it would be this. The one advantage that a traditional doughnut has over the beignet is the ability to be filled. I do love a good strawberry filled or bavarian creme-filled doughnut. And while really good beignets don't need the extra attention, I am always looking for ways to step up the fried dough game.

So, if you were going to stuff a beignet how would you do that? I would imagine that most of us would use the sandwich method. We'd take one beignet and then place our stuffing on top of it and then cap it with another beignet. There would certainly be nothing wrong with that approach but I do think this method I saw on Tik Tok might work a little better.

The method is quite simple. The first thing you do is mix up your beignet batter. You make it thick so it coats both sides of a metal spatula. You then dip the spatula in the batter, let the excess drain, and then put the blade of the spatula in the hot oil.

It will only take a few seconds for the batter to cook around the metal spatula blade. Dip the entire thing into the batter one more time and return it to the grease. Once the batter is cooked to a golden brown remove it from the oil.

Then to slide the beignet off the spatula lightly tap the edges. The fried dough will release from the spatula.

Viola! You now have a completely cooked beignet with a secret slot that's perfect for stuffing. Maybe you'll just put in powdered sugar or maybe you'll go Nutella. Personally, I think strawberries or Bavarian creme would be a good idea.

I would think you could also lean toward the savory side of the flavor scale too. Just imagine some crawfish etouffee or even some fried catfish with tartar sauce dropped in that heavenly pocket of fried dough.

I can tell I have your mind working overtime now. Personally, I can't wait to give this Tik Tok hack a try. Almost all of the others we've explored have worked out well, maybe this one will too. And if it does, I might have just discovered my new easy to eat, on the go, way to have beignets at any time of the day or night.
