Viral ‘Boudin’ Recipe Should Have All of South Louisiana Outraged
LAFAYETTE, La. (KPEL News) - Boudin is almost sacred around these parts, and usually any attempts to deviate from the forms we all know and love tend to be met with skepticism at best.
Boudin is a type of sausage unique to South Louisiana, made from a mixture of pork, liver, rice, onions, and various seasonings, all stuffed into a sausage casing. Sometimes, it includes other ingredients like liver and green onions. Boudin can be found in various forms, including boudin blanc (white boudin) and boudin rouge (red boudin, which includes blood).

You can get links of boudin boiled, smoked, and even fried, stuffed in pistolettes, and you can get the boudin mixture rolled into a ball and deep-fried. You can make boudin at home with pork shoulder, chicken livers, rice, stock, and trinity. Oh, and plenty of Cajun spice (at least a lot of cayenne and garlic).
You cannot find it anywhere of note rolled and fried in spicy Cheetos. That sounds like heresy, and we're not about that life down here.
