Steve’s Been In The Kitchen Again. What Is It This Time?
Yesterday, I made a big pot of chili. I used 3-1/2 lbs. of ground beef, 2 whole tomatoes, 4 cans of Ro-Tel, a lot of chili powder, cayenne, Tabasco Habanero, Crystal Sauce, garlic powder, onion powder & white pepper.
It simmered all afternoon. While that was going on, I made a shrimp pasta salad. I used veggie rotini, 3 boiled eggs, fat free ranch, & mayo made w/ olive oil. I had a few shrimp left over. This raised the question, “What to do w/ the leftovers?”
I thought about a shrimp burger, done that before. Shrimp omelet? Done that before. Chili omelet??….
Well How about a shrimp omelet topped with Chili?? I used 5 eggs. Before you call the ambulance to take me to the heart hospital, I only used 2 of the yolks. The cheese was 2%. If I say so myself, it wasn’t bad.
