Everybody loves bacon, or so it seems. We have it for breakfast, put it in salads, sandwiches, and use it to season turnip greens & green beans. There's an old, slightly sexist joke about Bacon. "Why is bacon like a woman? They both look good, smell good, taste good, and slowly kill a man."  Bacon is high in both fat & sodium. What if we could get that wonderful flavor without all the fat & cholesterol? The Inependent reports, researchers at the University of Oregon have patented a variety of seaweed that tastes like bacon. It's a form of marine algae that reportedly looks like  red lettuce, and tastes like bacon. It's also said to be twice as nutritious as kale. The university's Food Innovation Center is developing various items using the seaweed as a central ingredient. Seaweed smoothie anyone?
