Mozzarella Mashed Potatoes – Cookin’ With Marilyn
This is a great way to finish off leftover mashed potatoes.The combination of cheese, potatoes and golden crust are quite tasty.
Mozzarella Mashed Potatoes
2 tbsp bread crumbs
2 med onions,chopped
2 tbsp chopped green pepper
3 tbsp canola oil
1 garlic clove, minced
3 cups mashed potatoes (with added milk and butter)
1 1\4 cups cubed mozzarella cheese
1\2 cup shredded mozzarella cheese
Grease a 1 1\2 qt baking dish and sprinkle with bread crumbs. In a large skillet, saute onions, and peppers in oil until tender. Add garlic, cook 1 more minute. Remove from heat, stir in potatoes and cheese cubes. Transfer to baking dish and sprinkle with remaining cheese. Bake, uncovered at 375 for 25-30 minutes or until golden brown.
