Crab Salad with Tomato and Avocado – Cookin’ With Marilyn
This one is perfect for a summer lunch. Simple to make with seasonal ingredients!
Crab Salad with Tomato and Avocado
1\2 lb lump crab meat
1 1\2 avocados (diced)
1 large ripe tomato
5 tbsp lime juice
2 1\2 tbsp olive oil
1 tbsp finely chopped jalapeno
1 tbsp chopped cilantro
1\2 tbsp honey
1\2 tsp minced garlic
1\3 cup minced red onion
salt and pepper
tortilla chips,for serving
Combine lime juice with olive oil, jalapeno, cilantro, honey and garlic. Leave out a bit of cilantro to garnish. Season dressing with salt and pepper.
Toss crab with 3 tbsp of dressing. Toss avocado with onion and 2 tbsp of dressing. Season both with salt and pepper.
Place a tomato slice on plate and season with salt. Top with avocado,then crab and garnish with cilantro. Drizzle with the remaining dressing and serve with tortilla chips. Serves 4.
