Corn Maque Choux – Cookin’ With Marilyn
Here’s a delicious way to enjoy local vegetables in season! Tomatoes are getting ripe and are great for this quick tasty dish.
Corn Maque Choux
4 Tbps Butter
1 onion chopped
2 cloves garlic minced
1 bell pepper chopped
4 cups fresh corn
2 med tomatoes chopped
coarse salt and cayenne pepper
In a heavy skillet,melt butter and add onion,garlic and bell pepper-cook till soft.
Add corn and tomatoes, season to taste.Cover and cook on low fire stirring often to keep from sticking.
Corn will become tender after about 15 minutes. Adjust seasoning. Serves 4-6. ENJOY!!!
