Yesterday wasn't Monday, but I decided to cook up some red beans anyway. For the first time, I bought Blue Runner dry beans instead of Camellia, and to tell the truth, I couldn't tell you the difference. I thought I'd try to do something a little different with the sides, so I asked facebook what goes with red beans. The answers ranged from the usual rice and cornbread, to fried chicken, fried pork chops, cole slaw, and greens. Read the comments here. When I was about to head to the grocery to buy some sausage, fresh greens and a box of Jiffy cornbread, the skies opened up and it poured down raining, so I stayed home. We ended up having some creamy, delicious red beans, a can of corn, a side salad, and some leftover pizza. Guess I'll head to the store today - we need bananas, too.

Deb's Plain Red Beans Recipe 

1 pound of dry beans

about 3 cups of water

2 stalks of celery and a small onion, chopped

salt and pepper

Heat to boiling in pressure cooker

when boiling, cover and heat to pressure

when it jiggles, lower heat to low

cook for 20 minutes

reduce pressure

stir in half a stick of butter

Enjoy!

Look, I know this is not a gourmet meal, but it was what we had in the house, and it was fast, easy and delicious!
