Many of us foodies have been closely following the progress of the renovations going on at Prejean's Restaurant in Carencro.

The wait is nearly over as the restaurant is opening its drive-thru today.

This is a bit of a surprise as new owner Tim Metcalf announced recently that the restaurant would not have its grand reopening until early February. Now, that's still true as that date is set for February 8 when the dining room will reopen.

In the meantime, fans of the Acadiana landmark restaurant will be able to enjoy a limited menu through Prejean's new drive-thru window. You'll be able to enjoy boiled crawfish and shrimp, fried shrimp or catfish platters, gator wings, seafood poboys, crawfish enchiladas, and a few more select items.

In addition to the drive-thru, owner Tim Metcalf tells the Acadiana Advocate that an outdoor dining space has been added under a large oak tree on the property. The elaborate outdoor space will have a stage and restroom facilities and will open in the spring.

Prejean's will offer live music as coronavirus restrictions ease up, however, those performances will be less frequent than in the past with a wider variety of bands.

The restaurant will also be offering a Sunday brunch beginning in February.

Metcalf is acknowledging that things are constantly changing during the coronavirus pandemic.

"We're learning how to pivot with what's going on in the world right now and with what's going on across the street right there," Metcalf told the Acadiana Advocate. (He's referring here to the Amazon Fulfillment Center being built nearby on the old Evangeline Downs property.)

"We're going to figure out how they eat, and we're going to adapt. If the restaurant needs to be open for breakfast or needs to be open later or the window needs to be open, we're going to make it happen. One thing I'm good at is pivoting."

If you can't wait to try the new and improved Prejean's, call ahead and order, then swing by the drive-thru window. Until the full grand reopening, the drive-thru will be open from 4:30 pm to 9:30 pm daily.

When the entire restaurant opens on February 8, it'll be open 10:30 am to 9:00 pm Sunday through Thursday and from 10:30 am to 10:00 pm Friday and Saturday.
