My grandson recently emerged from my kitchen & asked why I have a jar of urine in the refrigerator. I replied, after a bit of laughter, that it was stale beer. Nathan's an inquisitive youngster, and wanted to know why I keep old, flat beer around. I explained that I cook with it. Beer's a great marinade. You can do great things with cheap cuts of meat. Shoulder roasts, that kind of thing. It's also great for chicken, but we're talking about breakfast. Beer pancakes make a great centerpiece for Sunday brunch. The first time beer pancakes were mentioned to me, I thought it was a joke. It's pretty simple. Substitute beer for whatever liquid your recipe, or mix instructions call for. They come out unbelievably fluffy! Have plenty of syrup on hand. You'll need it!
