Muffuletta Salad burger? I didn't know what else to to call it. Saturday morning, while sipping my coffee, I conceived the idea for this little sandwich. I started with about 6-7 oz. lean ground beef, & didn't mash it into a patty. Just gently formed it, so the air pockets weren't squeezed out. Then I pierced it multiple times with a fork. This makes it easier for the fat to run out while cooking. (One of the ways I delude myself that I'm eating healthy.) Season with some Zatarain's.  Slap Ya' Mama, Tony's, or whatever you have on hand works fine. While it broiled, I warmed some olive relish in the microwave for about :15 seconds so I could drain the fat by placing it on a paper towel. I put the relish on the burger, and topped it with 2 slices of Swiss cheese, melting it under the broiler. I served it on top of a bed of Dole "Very Veggie" salad (Pea pods, carrots, purple cabbage, radishes & lettuce.) light mayo & mustard, between two slices of toasted whole wheat bread, with honey barbecue sauce. Give it a try.
