I know...Early December & temperatures in the 70's!  A few days ago, the weather was cool & I was a little tired of gumbo (cook off last weekend). I decided to make chili. I don't put beans in my chili.

This time around, I thought..."Sausage?"  Why not?  I went to my neighborhood Mom & Pop grocery store to get some fixin's. I spotted some Savoie's Jalapeno cheese sausage....Perfect!

I browned 3-1/2 lbs. of ground round, added 4 cans of Mexican Style Rotel, draining 2 & dumping in the other 2, juice & all. I added one HUGE fresh tomato. Since canned stuff is usually loaded with salt, I decided not to use blended seasonings. Instead, I used some cayenne, chili powder, onion powder, garlic powder, lime juice, Guidry's Fresh Cuts, & Crystal sauce. I thought it came out pretty well, so I took a picture of it & posted it on my Facebook Page. It received more than 50 "Likes" & quite a few comments, including some interesting ideas for my next batch. Bruce Nowlin

recommended using a smoked Belgian Beer. I think I'll give it a try! Back to the weather thing....I made this Friday night. Yesterday, we nearly hit the 80 degree mark. I had some for breakfast. Now, most of it's in the freezer, along with some Gumbo.
