Cajun Crawfish Cornbread – Cookin With Marilyn
1 lb peeled crawfish
2 boxes Jiffy cornbread mix
1 can creamed corn
2 cups milk
1\2 cup oil
3 eggs
1 tsp salt
1 1\2 cups shredded cheese
1 onion (chopped)
3 cloves minced garlic
4-6 jalepeno peppers(chopped)
1\2 stick butter
Preheat oven to 375
Saute onions and garlic in 1\2 stick butter until soft-add crawfish remove from fire.
Mix all remainding ingredients then combine with crawfish mixture
Pour into a well greased 9 x 13 baking dish and bake for approximately 1 hour
Cool for 15 minutes before cutting into squares
This is a great dish to serve during the Lenten season. Have a great Mardi Gras and Throw Me Something, Mister!!!
