Easy Christmas Brunch Casserole – Cookin With Marilyn
Here is a great prep-ahead casserole recipe for Christmas morning. It will let you enjoy all the activities around you, plus everyone will have something wonderful to eat!
Christmas Brunch Casserole
Ingredients
1 lb bacon
2 chopped onions
2 cups sliced mushrooms
1 tbsp butter
4 cups frozen hash brown potatoes, thawed
1 tsp salt
1\4 tsp garlic salt
1\2 tsp pepper
4 eggs
1 1\2 cups milk
1 pinch parsley
1 cup shredded sharp cheese
Directions
Cook bacon in large skillet until evenly browned. Drain and set aside. Add mushrooms and onions to skillet and cook till tender. Grease a 9 by 13 casserole dish with butter. Place potatoes in bottom of dish. Sprinkle with seasonings. Top with crumbled bacon, then add onions and mushrooms. In a mixing bowl, beat eggs with milk and parsley, pour eggs over casserole and top with grated cheese. Cover and refrigerate overnight. Preheat oven to 400 degrees. Bake for 1 hour or until set.
