Try Steve Wiley’s Jalapeno Sausage Omelette

Saturday morning (?) I was having my coffee & thinking about breakfast. Maybe it was Saturday afternoon, now that I think about it. Anyway, I decided to make an omelette.  I used 6 eggs, but only 3 of the yolks (My way of deluding myself that I’m eating healthy), 1 link of Savoie’s jalapeno sausage, & about 3/4 cup of grated cheddar cheese. I cut the sausage in half lengthwise, and sliced it. I boiled it for a few minutes, letting the fat melt so some of it would run out (another form of self delusion). I cooked the eggs in my favorite black skillet, added the cheese & sausage, and sprinkled in a little cayenne. Top it off with some salsa, and a buttered new potato on the side with fresh ground pepper. It wasn’t bad, if I say so myself.
