I decided to hit the kitchen this 4th of July weekend & Prepare something I hadn't tried before. It started out as a crawfish dish, but evolved.There was no recipe, so I'm guesstimating about the quantities of some of the ingredients. Here goes:
1 lb. cleaned crawfish tails, 1 lb. boiled shrimp, 1 cup shrimp stock, 2oz. vodka, 2 pints sour cream, 1 cup 'Guidry's Fresh Cuts' 1 diced banana pepper, 1 cup chopped parsley, a few dashes hot sauce, Nunu's Cajun seasoning, 1 cup brown rice.
While shopping for the 'fixins' I ran into Carlos Russo. He suggested rinsing the tails so the mixture wouldn't turn out too yellow. When he spotted the bottle of vodka in my cart, he said, "be sure to put some of that in it, lots of parsley, too"..
Prepare the rice like you ordinarily would. Sautee' the seasoning mix. Combine with the stock, sour cream, vodka, and shrimp. Add the crawfish tails last. Serve over rice, sprinkle with parsley & season to taste. Bon apetit...
