A couple of weeks ago, I asked my Facebook friends to suggest some easy pie recipes for me and, boy, did they come through! I'll be testing out several of them over the holiday season. The first one I attempted was Pumpkin Pie, made more-or-less according to the instructions on the can of Libby's Pumpkin Pie Mix. Here's my version:

Ingredients

1 Ready-Made Graham Cracker Pie Crust
1 can Libby's Pumpkin Pie Mix
2/3 cup of Evaporated Milk
2 eggs
Whipped Topping

Directions

Mix the pie mix, evaporated milk & eggs.
Pour almost all of the mix into the pie shell.
Bake at 350 for 90 mins, or until a knife inserted in the center comes out clean.
Cool on counter.
Chill in refgrigerator.
Top with Whipped Topping.
