Marilyn has done it again with a delicious summer treat! Fresh lemons and strawberries make it SO good! Here's the recipe...
Strawberry-Lemonade Muffins
2 1\2 cups self rising flour
1 1\4 cups sugar, divided
8 oz. container sour cream
1\2 cup melted butter
1 tablespoon lemon zest
1\4 cup fresh lemon juice
2 large eggs, lightly beaten
1 1\2 cups diced fresh strawberries
Preheat oven to 400 degrees. Combine flour and 1 cup sugar in a large bowl. Make a well in center of mixture. Stir together sour cream and next 4 ingredients. Add to flour mixture, stirring until dry ingrdients are moist. Gently fold strawberries into batter. Spoon batter into lightly greased muffin tins, or use paper liners. Fill 3\4 full. Sprinkle remaining sugar over batter.
Bake for 18-20 minutes or until golden brown and toothpick inserted in center comes out clean.
Cool 10 mins. Makes 15 muffins and are great for breakfast or a brunch. Enjoy!!
