What is it about illness & soup? I rarely take ill. Nor am I a passionate soup fan. After three days holed up at home with the flu, I found myself craving homemade soup. Most people go for chicken. I've eaten so much chicken lately, it's a wonder I haven't sprouted feathers, so I decided on beef & Andouille. I cubed 1-1/2 lbs. of sirloin tip steak & browned it in a black skillet, dredged it in dry roux, returned it to the skillet and cooked it down with some water. Then I put it in a pot, added more water, a couple bouillion cubes, a pound of cut up Andouille, 2 bay leaves and 2 bags of frozen soup vegetables. A couple people on Facebook commented that it looks like gumbo. I guess it does, but it doesn't taste like gumbo, and it's not thick.
