We love our celebrations here in South Louisiana. Old man Winter sure messed up our Mardi-Gras. Bad weather seems to inspire many of us to cook, myself included. After returning home, I decided to see what I could whip up. A scan of my fridge & pantry revealed I didn't have everything I needed for gumbo or chili. I wasn't about to make a grocery store run so I improvised. A package of ground round became meatballs. I cut up some smoked sausage & boiled it for a few minutes to reduce its fat content. Then I combined the sausage, meatballs, 2 cans of cream of mushroom, and 1-1/2 cans of skim milk in a black pot, and seasoned it with some Cajun seasoning. I cooked some brown rice & had a couple "Jello shots." It's nothing fancy, but it tasted okay & helped alleviate the doldrums of a Mardi- Gras rainout.
