Here I go again, posting about food. I came home famished from a busy day, but didn't want fast food. Sandwiches are quick & easy. After poking around the fridge for a minute, here's what I came up with. I cut up a baked chicken leg quarter, and mixed in some olive oil mayo. Next, a layer of guacamole on a slice of whole wheat bread. Add a bed of lettuce, then the chicken and another slice of bread. Voila! It's tasty, and filling. Give it a try!
