This wonderful recipe from our friend Marilyn, sounds fancy, but it’s easy!

 

Smothered Veal Chops with Mushroom Gravy

 

Ingredients

 

4 thick cut veal chops
1\4 cup vegatable oil
4 ozs chopped bacon
1\4 cup flour
2 cups sliced onion
salt
black pepper
1\2 lb fresh mushrooms (your choice) wiped clean and sliced – I prefer shiitakes or baby bellas
1 Tbsp chopped garlic
1 1\2 cups chicken stock
fresh parsley and green parts only of 4 green onions(chopped)

 

Directions

 

Season chops with salt and pepper. In a large saucepan, heat vegatable oil. When oil is hot, add chops and sear for 6 minutes, turn over and continue to sear for 5 more minutes. Remove and set aside. Add bacon and fry till crispy. Stir in flour and whisk until mixture is smooth. Cook, stirring constantly until mixture is the color of chocolate, about 3 mins. Add onions and season all with salt and pepper. Cook for about 2 minutes, then add mushrooms and garlic and cook 2 more minutes. Add stock and bring to a gentle boil, reduce heat to simmer for 5 mins. Return chops to pan and simmer 10 more minutes. Remove from heat, stir in parsley and green onions. Serve chops warm with pan gravy. Serves 4. Enjoy!!
