Simple Shrimp – Cookin’ With Marilyn
This is a great dish to take to a summer pool party!
2 lbs large shrimp, peeled and deveined
2 tbsp lime juice
1\2 cup chopped fresh cilantro, divided
8 cloves garlic
1\2 tsp kosher salt, divided
1\2 tsp crushed red pepper,divided
2 tbsp extra virgin olive oil
Place shrimp in a medium bowl and toss with lime juice, 1\4 cup cilantro, half the garlic, 1\4 tsp salt and 1\4 tsp red pepper. Cover and let marinate in refrigerator for 20 mins.
Heat oil in a large skillet over med-high heat. Add shrimp, marinade and remaining garlic. Cook until shrimp turn pink throughout, about 5 mins. Remove from heat, add remaining cilantro, s alt and red pepper. Toss to cover. Serve with croutons and enjoy!
