Simple Chicken Caprese – Cookin’ With Marilyn
This dish sounds complicated, but it's so simple to make. You'll feel like a real Italian chef when you serve Marilyn's Chicken Caprese!
8 bacon strips
4 boneless skinless chicken breasts
1 tbsp olive oil
2 plum tomatoes sliced longways
6 fresh basil leaves, sliced thinly
4 slices mozzarella cheese
Bake bacon at 400 degrees for 8-10 minutes or until partially cooked but not crisp. Drain on paper towels.
Place chicken on ungreased baking pan, brush with olive oil and season with salt and pepper. Top with sliced tomatoes and basil. Wrap each breast with 2 bacon strips arranging in a crisscross. Bake uncovered at 400 for 25-30 minutes. Top with cheese and bake 2 minutes longer or until cheese melts. Serves 4. Enjoy!
