The 26th annual Cracklin Festival is this weekend in Port Barre, Louisiana.  For those of you who aren't sure what that is, let me explain. Cracklins are chunks of pork fat with a small amount of skin attached which are fried and seasoned. They're sinfully delicious and very much a part of the culture and cuisine of our area. There's much debate over where to get the best cracklins, but if you'd like to taste for yourself, Port Barre is where you want to be this weekend. In addition to cracklins, you'll taste boudin, jambalaya and many more Cajun specialties, while you enjoy great music and a fun family festival.
