Marilyn's Cousin Oscar loves this dish- and you will, too!

Oscar's Okra
2 lbs frozen chopped okra
1 lg onion
3 cloves garlic
6 green onions
1\4 cup parsley
1 can Ro-Tel tomatoes
2 lbs peeled and deveined med shrimp
Salt and red pepper
olive oil
Drizzle 2 tablespoons olive oil in large pot. Chop all vegetables, put into hot oil, add okra. Smother this down until vegetables are soft and slime is gone from okra. Add tomatoes including liquid and continue to cook over med heat for 20 minutes. Season shrimp with salt and red pepper, then add to pot. Cook until shrimp are pink, being careful not to overcook.
This can be served over rice or used as a side dish. This is always requested by my favorite cousin Oscar Hale when he visits from Lake Sam Rayburn.
