Louisiana crawfish farmers expect to harvest a decent crop of crawfish in the near future. But this week's cold may cause some declines in availability because the chilly temeratures sends crawfish into a resting state. During this time, they don't feed as much and often bury themselves in the mud. When the temperature is higher, they're more active and can be caught more easily. In 2014, the cold winter delayed the harvest all the way until March. Ugh! I sure could eat some right now!
