These pancakes are awesome, simple and healthy, and all you'll need is a banana and 2 eggs.

A few nights ago while visiting with friends somehow the conversation turned to pancakes.  That's when my friend Tye asked if I had ever tried flourless pancakes, I told him I had never heard of such a thing.

Tye said all I would need was one banana and 2 eggs per serving.  I couldn't wait to hear more.  What you do is smash up a banana in a bowl.  Lumps are fine.  Then whisk up 2 eggs.  I did it all in one bowl but some people whisk the egg in a separate bowl.  Mix the banana and eggs together.  That's it, you are ready to go!

Now you are ready to cook the mixture just as you would a regular pancake.  If using a non-stick pan, butter or oil is not necessary.  I used a little butter for flavor.  You might also try coconut oil.  Whatever you normally add to your flour pancakes may be added to these, keeping in mind flourless pancakes are already sweet due to the banana.  They are great without anything and much healthier that way.  One banana and 2 eggs yielded about 3 pancakes.
