Ever Had A Gumbo Omelet? I hadn’t ’til just a few minutes ago. Last night, I thawed some gumbo that I made a few weeks ago. I thought it was one of my better ones. It had four kinds of sausage, Andouille, fresh HOT sausage, fresh jalapeno, and fresh Italian. A friend told me on Facebook, she’s making gumbo today. I messaged back, “I’ve got a crazy idea”….

I used about 2 tablespoons of rice & just enough “juice” to make it a little wet, stirred the chicken & sausage in, microwaved it for1 minute & seasoned it like any bowl of gumbo…a little file’ & some tobasco. 4 eggs, seasoned with a little tobasco & some “Tony’s”. From there, I cooked it in my black skillet like any other omelet. It wasn’t bad, if I say so myself. Sunday brunch and the NFL Network!! 😉
