Easy Italian Wedding Soup
Here is another one of Marilyn’s amazing recipes. Perfect for any occasion and SUPER yummy… ENJOY!
1 pkg Italian sausage (mild or hot- your preference)
1 bag fresh spinach
1 large onion
3 cloves chopped garlic
1 can white navy beans
32 oz chicken broth or stock
Shredded Parmesan cheese
Remove sausage from casing and brown into crumbles(the finer the better)
Add chopped onions and garlic, saute until soft.
Rinse beans in a colander, then add to sausage mixture along with broth. Gradually add spinach to the pot until it is wilted. Cook on medium heat for 30 minutes, ladle into soup bowls and garnish with Parmesan cheese. No seasoning is really necessary due to sausage and broth, unless you like it hotter. I like garlic bread with this dish. Serves 6-8 Enjoy!!!!
