Easy Artichoke Soup – Cookin’ With Marilyn
Marilyn has a simple and delicious rainy day recipe for us today! It sounds fancy, but it's so easy!
2 cans artichoke hearts
1 lg onion chopped
1 tablespoon butter
6 cups chicken broth
2 cups milk
salt and black pepper to taste
Heat butter in large pot over medium heat. Saute onion until translucent. Drain artichokes and chop roughly. Add to onions, pour in broth and heat through, slowly stir in milk. Do Not Boil!! Season with salt and pepper. Sprinkle a few croutons on top and serve in mugs. Enjoy!
