This casserole will impress and satisfy all with its hearty ham,eggs and vegetables. Assemble it the night before and cook it Easter morning after the bunny delivers his treats.

Preheat oven to 350.

Ingredients

2 tsp canola oil
1 cup chopped Vidalia onion
1 red bell pepper,chopped
1 1\2 cups chopped ham
2 cups chopped fresh spinach
8 large eggs
2 cups milk
1 tsp dry mustard
pinch of red pepper
pinch of Kosher salt
1 cup of shredded sharp Cheddar cheese
8 cups cubed white bread

Directions

Lightly oil a 9x13 inch casserole dish.

Saute onion in a large skillet until soft,about 5 mins. Add red peppers and continue to sauté until they are soft. Stir in ham and spinach and cook until spinach begins to wilt. Set aside.

In a large bowl, whisk together eggs, milk, mustard, salt and pepper. Spread bread over bottom of baking dish. Spoon ham and vegatables over bread evenly. Pour egg mixture over ham and veggies. Sprinkle cheese over the top. Cover and refrigerate for at least 2 hours, preferably overnight. Bake until set in middle, about 40-50 mins. Let cool 10 minutes before serving. ENJOY!!!
