It turns out that you only have to refrigerate store-bought eggs for an interesting reason. An egg is laid with a cuticle, a thin substance that keeps bacteria out. The cuticle also allows the egg to last longer. Because of salmonella fears, the USDA requires eggs sold in stores to be washed, which removes the cuticle. This means store - bought eggs won't keep as long as freshly laid eggs and have to be refrigerated. Fresh eggs from your or someone else's chickens can be left out on the counter until used.
