When you live alone, you can approach meals one of three ways, eat a lot of takeout, buy microwaveable individual meals, or cook too much for one person & get creative with leftovers (and your freezer). I choose option #3. A few days ago, I decided to cook a boneless pork loin. I marinaded it for two days in a mixture of Italian dressing & beer. Friday evening I put it in a black pot, without the marinade at 250 degrees for about an hour.. Then I   added the marinade, and let it go for a couple more hours. It came out real tender & juicy. I served it with hot barbecue sauce on the side. By the time I was done with my Saturday morning coffee, it was lunchtime. What to do? There was a lot of pork loin left, so I baked a potato, warmed some slices of the pork & marinade. Then,I put it on top of the potato with some jalapeno pepperjack cheese & nuked it long enough to melt the cheese. By the way, the fork & knife in the above photo aren't on the wrong side. They're on the left.
