I love throwing new & different breakfast ideas together on weekends. They generally come to me while I'm having my morning coffee. This one was no exception.
I nuked a "medium" sized sweet potato, put it on a plate,  smashing it up, spreading it around the plate. I then put butter (margarine) all over it & put it back in the microwave for about 30 seconds to melt the butter.
I seasoned it with some Jared Lagneaux's Creole Seasoning. I cooked two eggs (Just one yolk) "over easy" in a black skillet & put that on top. Then I warmed some Tostito's Salsa con Queso dip, poured it over the top & served it with a Bloody Mary. It wasn't bad!
