Here's a unique brunch idea. Every region has unique food items. I've lived in three diverse regions of the US. The area of northern New York where I grew up is noted for great cheese, natural maple syrup, and a unique bologna made only in Croghan, NY. Croghan Bologna is absolutely addictive! Southern Louisiana is famous for a LONG list of beverages & foods. I decided to combine the two for  breakfast. I made whole wheat pancakes, substituting Abita Beer for the liquid called for in the instructions, & used pecan oil instead of canola, or whatever. The beer makes them REALLY fluffy! Add a little butter, the maple syrup, bacon, and a bloody Mary. Bon appetit!
